Baked Shrimps With Ritz Crackers Crumbs

Here's another easy recipe for you. The original recipe calls for scallops, and since scallops are very pricey, I substituted shrimps. I keep a big pack of medium shrimps in my freezer so I have them handy when I need to stir-fry veggies with shrimps or cook Mung Beans with Shrimps instead of pork (Ginisang Monggo). This dish smells really good while baking in the oven, you can not resist to eat them right after baking. Everything really tastes and smells good with butter!

BAKED SHRIMPS WITH RITZ CRACKERS CRUMBS


INGREDIENTS

1 lb Shrimps, deveined and pat dry
6 tbsp butter, melted and divided
10 pcs Ritz Crackers
salt and pepper
1 tsp garlic powder
PROCEDURE:
1. Preheat oven to 375 deg. F
2. Put Ritz crackers in a ziplock bag and crush into crumbs, set aside.
3. Pour half of the butter on the shrimps and stir to coat.
4. Sprinkle the shrimp with salt, pepper, and garlic powder.
5. Arrange the shrimps in a shallow buttered casserole.
6. Cover with Ritz crackers crumbs.
7. Pour rest of the butter over crumbs
8. Bake for 15 minutes.

A No Brainer Chopsuey with Shrimps

I buy frozen vegetables so I have them in stock whenever I need them. I have different kinds of frozen veggies like corn, peas, mixed veggies, and stir fry veggies. I also have a bunch of Mama Sita mixes and sauces in my pantry, so I can concoct a dish in a flash when I don't have much time to do it from scratch. I cooked Chopsuey with Shrimps using the frozen stir-fry veggies and Mama Sita's Chopsuey/Pancit Canton Stir Fry Mix. The stir fry veggies include corn, carrots, baby corn, broccoli, lima beans, green beans, peas, and sweet peas among others. This is a no brainer dish and is ready in no time.

CHOPSUEY with SHRIMPS

INGREDIENTS:
2 cups thawed Stir Fry Veggies
1 pouch Mama Sita's Chopsuey/Pancit Canton Stir Fry Mix
1 cup water
1 cup cleaned shrimps
2 tbsp Canola Oil
1 tbps minced garlic
1 medium onion
salt and peper

PROCEDURE:
1. Dissolve the mix in water and set aside.
2. Saute garlic and onion in 1 tbsp of oil for 3 minutes.
3. Add in shrimps and sprinkle with salt and pepper and cook for additional 2 minutes.
4. Scoop out shrimps and set aside. You don't want to overcook the shrimps otherwise they will get tough.
4. Pour the rest of the oil in the same pan and stir fry the veggies for 2 minutes.
5. Pour in the dissolved mix and cook until sauce thickens and the veggies are fork tender.
6. Mix in the shrimps and its done.

Rotini with Broccoli and Shrimp

This is my own twist to Giada's recipe of Farfalle with Broccoli. I used whole grain instead of regular pasta to make it healthier; Rotini (spiral pasta) instead of Farfalle (bowtie pasta); and added some shrimps for more flavor and texture .

BENEFITS OF WHOLE GRAIN:
A grain is considered whole when all three parts – bran, germ and endosperm – are present. Most people know that fruits and vegetables contain beneficial phytochemicals and antioxidants, but many do not realize that whole grains are often an even better source of these key nutrients. In fact whole grains are a good source of B vitamins, Vitamin E, magnesium, iron and fiber, as well as other valuable antioxidants not found in some fruits and vegetables. Most of the antioxidants and vitamins are found in the germ and the bran of a grain.

ROTINI with BROCCOLI and SHRIMP

INGREDIENTS:
1 pound whole grain Rotini pasta
24 pcs medium shrimps, shells removed
2 heads broccoli, trimmed to florets (about 4 cups)
1/4 cup extra-virgin olive oil
4 tablespoons butter
3 garlic cloves, chopped
8-10 anchovy fillets, diced
1/4 teaspoon red pepper flakes
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
1/2 cup grated Parmesan

PROCEDURE:
1. Bring a large pot of salted water to a boil over high heat. Add the pasta and cook, stirring occasionally.

2. After 5 minutes, add the broccoli florets to the pasta and stir and cook for another 4 minutes. Drain pasta and broccoli, reserving 1 cup of the pasta water.

3. Meanwhile, in a large skillet, heat the olive oil and butter over medium heat. Add the garlic, anchovies, and red pepper flakes and cook for 3 minutes.

4. Add the shrimp and cook for another 2 minutes.

5. Add the broccoli, pasta, salt and pepper and toss. Add some of the reserved pasta water, if necessary, to make a light sauce.

6. Transfer to a serving platter and sprinkle with Parmesan.
