Cheddar Broccoli Salad



This is a recipe I got from a girlfriend. I normally eat broccoli steamed or stir-fried or as an appetizer in a fresh veggie platter. Here's another way of eating it - just raw in a salad. The original recipe calls for 12 strips of crisp bacon crumbled on top but I replaced it with almond sliver and dried sweet cranberry for a healthier twist.



INGREDIENTS:
6 Cups fresh broccoli florets
1 ½ cups (6oz)
shredded cheddar cheese
1/3 cup chopped red onion
1 ½ cups mayonnaise

¾ cup sugar 3 tbsp red wine vinegar or cider
2 tbsp roasted almond sliver
2 tbsp dried sweet cranberry
PROCEDURE:
1. In a large salad bowl, combine broccoli, cheese & onion.
2. In a separate bowl mix together the mayonnaise, sugar & vinegar. Pour over broccoli mixture & toss to coat.
3. Refrigerate for at
least 4 hrs.
4. Just before serving, stir in dried cranberry and almonds.

  1. ay naku sis, ginutom naman ako dito sa salad mo, it looks so tasty. hubby's favorite broccoli dish naman is stir fried with lots of garlic and cheese.

  2. I love this salad. :) Pwede magrequest? LOL Yung pasta dish ni Giada that you made a year or so ago. I think it was the first pasta dish of hers that you tried. Maybe you can make it for your party para ma-share mo na rin dito. :)

  4. your post reminds me that I still have broccoli inside the ref and this looks like a good recipe! no cranberry and almonds around though, so I have to improvise. :)

  7. yummy this sounds and looks good!! :) will have to try this one of these days - in fact i was grocery shopping recently and looked at the broccoli, and realised I missed having it but I'm also bored with it... this should fix that problem :) :) btw are you interested in waldorf salad?   8. hey guess what? I tried this out, using about half of the portions you provided. Apart from it being perhaps a tad sweeter than I would have liked, it came out fantastic - my hubby and I just couldn't sotp eating it!!! :) thanks for sharing the recipe :)
